The bunches of carricante are destemmed and pressed. A cold static decantation follows before starting a partial fermentation in steel tanks. After 3 days the wine is transferred to 225 liter oak barrels to complete the fermentation. Aging follows in “smoked” toasted French oak barrels for 8/12 months. Straw yellow, citrus and ginger on the nose. Minerality and pleasant acidity that gives crunchiness.
